Cajun ideas
Why not sprinkle a little spice onto some cod loin and roast it before serving in a soft taco with salad and salsa.
Jambalaya
Fry some sliced chicken breast and chorizo, remove from the pan and soften a sliced onion, sliced celery and green pepper. Add the meat and sprinkle on 3tsp of Cajun mix and fry for 1 minute. Add a mug of rice and stir to coat before adding a can of chopped tomatoes and 200ml of chicken stock. Cover and simmer gently for 25 minutes until the rice is cooked but still moist (add a little more water if needed). Add some cooked prawns for the last 8 minutes and recover. Stir and serve.
Chilli ideas
There are lots of ways to enjoy Chilli con carne. Serve with rice, on a jacket potato or with potato wedges and a large dollop of soured cream on the side.
Alternatively, to share, top a large bowl of tortilla chips with steaming hot chilli and scatter with grated cheese with spoonful's of salsa, guacamole, soured cream and sliced chilli peppers.
If you want a vegetarian option, try Quorn mince or just a selection of vegetables (squash, mushrooms, sweet potato etc).
Pulled pork ideas
So, you now have enough pulled pork for a party! Why not serve it up with different options such as a choice between sort or hard tacos, flour tortilla, soft rolls or even lettuce leaf wraps.
Add different toppings, shredded lettuce, soured cream, salsa, guacamole, American mustard, sliced dill pickles, grated cheese, hot sauce etc.
Use a little less rub if you want to try pulled chicken or the same for a beef joint of the same size. Use the same method as in the recipe, remember "low and slow".
More Cajun ideas
OK, a little more exploring with your Cajun spice mix.
How about adding a teaspoon or so and mixing it into a batter mix or in flour if bread crumbing prawns or chicken strips.
Alternatively, why not add a little to some mayo or BBQ sauce to add a little zing?
Why not mix it into some softened butter and the chill to firm up and use the spiced butter to top sweetcorn are grilled meats?
